Baklava with honey yogurt ice cream

Today we brought a delicious recipe for who have an exceptionally sweet tooth. You will learn how to prepare baklava with honey yogurt ice cream and nuts.

The ingredients

Yogurt ice cream ingredients

  • 200ml double cream
  • 500g full-fat yogurt (Greek yogurt is perfect)
  • 5 tbsp. pure honey (We recommend you Bee Honey)
  • 1 tsp rose water, to taste

The syrup ingredients

  • 180g caster sugar
  • 1 cinnamon stick
  • 3 cloves
  • Juice and zest of ½ orange
  • Juice and zest of ½ lemon
  • 2 tbsp. honey (such as Bee Honey)
  • 1½ tsp rose water water

The syrup ingredients

    150g walnut pieces

    150g pistachios

    150g white or brown sugar

    ½ tsp ground cinnamon

    11 filo pastry sheets (25cm x 30cm)

    75g melted butter

For making baklava, first of all, preheat the oven to 180°C. Grind mix of the walnut, pistachios, sugar, and cinnamon in the food processor until quite ground but still a little chunky. Then halve the filo pastry sheets to be fit for your dish. Brush shetts lightly with melted butter, and then lay them in the dish. You should repeat this process until you have six buttered sheets layered on top of each other. In next step, tip your nut mixture on the top, and spread them gently. You need to repeat the layers with other sheets.

Using a knife, cut the top of filo layers into 12 rectangles. Afterwards, bake it for 45 minutes until the top of it be lightly golden and pastry be crispy. Now put the syrup ingredients and 180 ml cold water into a saucepan and bring to a simmer. After you reached a sticky syrup, keep it warm until your baklava be ready.

When your baklava comes out of the oven, spray the prepared warm syrup over the top. Ba careful that your baklava should not immerse into the syrup. Now put your baklava in a cool place for at least 6 hours.

In next step, you need to prepare the dessert’s ice cream. Whip the double cream in a mixing bowl until billowy. Then add Greek yogurt, Dr. Bee honey, and rose water, and mix them reach a smooth cream. Afterwards, churn in an ice cream machine.

Final step is serving your delicious dessert. Take the yogurt ice cream out of freezer for 10 minutes, and then service pieces of baklava with the scoops of ice cream. You can decorate your dessert with extra nuts as well as fruits slices.
